meatloaf

The teacher who I share my portable with told me about her easy recipe for meatloaf that she had found on Pinterest. I went and found it on Pinterest too and made it tonight. It was SO easy, SO yummy, and my husband who says he has never liked meatloaf loved it. I did swap the ground beef for ground turkey in a (successful) effort to make it a little lower in calories and we were pleased with the results. I'm sure it is wonderful with ground beef.

Pineapple Angel Food Cake

Tried this recipe.  It was incredibly easy and really delicious and nonfat.  I would say there were really only about 3 servings because Frank ate almost all of it in one sitting.

Pineapple Angel Food Cake

Number of Servings: 12

Ingredients

1 box (1-step) angel food cake mix
1 large can crushed pineapple

Directions

Put dry cake mix in bowl (do not add the water as directed on the box). Add entire can of pineapple with juice. Mix carefully until all dry mix in incorporated. Pour into either a greased tube pan, greased 9x13 pan, or cupcake pan with liners. Bake at 350 degrees for time on box for size pan (around 30-40 minutes. When sides pull away from pan and toothpick comes out clean, cake is done.

Can also use low calorie cherry, blueberry, or lemon canned pie filling instead of pineapple.

Jello frosting

Aimee wanted a strawberry birthday cake. I decided to try this jello frosting recipe that I found on Pinterest. If we had eaten the cake right away I would have frosted the entire thing in this frosting, it was amazing! Not too sweet, very fluffy. Try it out!


Roasted Banana Bread

I had four over ripe bananas and decided to look on Pinterest for a recipe.  The recipe for Roasted Whole Wheat Banana Bread was pinned over and over and over, so I thought it must be exceptionally good.  (Of course, most pinned recipes have not been tried by the pinner yet.)
The recipe called for roasting the bananas in the oven for about 15 minutes before peeling them and adding them to the batter.  I did this and it filled the house with the smell of over ripe bananas.
When the banana bread came out of the oven we tried it.  It was ok.  Certainly it wasn't good enough to merit the extra work and time of roasting the bananas.  I need to stick with my old tried and true recipe.

Orange Julius

I tried an Orange Julius recipe that turned out terrible. It called for an entire cup of sugar. Annie and Jared didn't like it and I wasn't ever going to make an Orange Julius again. But then Annie found this recipe and it is absolute perfection. We have had an Orange Julius every night for the last week!
